Raise your hand if you will pretty much die if you don’t eat breakfast in the morning.
That would be me. Some of my most difficult moments are in the morning before I’ve eaten, and the kids are bugging me for breakfast. It’s pretty much understood that mom needs some fuel in the tank before she can properly function as an adult. Prior to that, I’m nothing more than a shaky, growly bear.
Insert homemade granola.
Granola is one of those breakfasts that stick with you. You know, one that doesn’t pick you up and drop you on your rear end half an hour later. And you don’t have to eat a ton of it, either. AND there’s about a million custom additions you can add to a simple, good granola recipe like this one.
My kids like raisins in theirs. You could do dried cranberries or other dried fruits. Or fresh fruit. Or blueberries, raspberries, strawberries. Maybe a pinch or two of flax. Whatever suits your fancy, this easy granola recipe will make your mornings easier. With less growlies from mom.

Easy Homemade Granola (printable recipe at bottom of post)
- 6 cups organic rolled oats (I prefer old fashioned, but quick oats will work too)
- 1 cup organic shredded coconut (I like the fine shredded stuff)
- 1 cup sliced almonds
- 1 teaspoon cinnamon
- 1/4 cup organic unrefined coconut oil
- 1/4 butter
- 1/2 cup honey
- 1 teaspoon vanilla (click here to make your own!)
Directions:
In a large bowl, combine the dry ingredients.
In a small saucepan, melt the coconut oil and butter.
Pour over the oats mixture. Add the honey and vanilla and combine everything well.
Divide between (2) greased (with butter) 13″ x 9″ pans.
Bake at 350 degrees for 10 minutes. Stir, making sure to scrape the sides (or they will burn), and return to the oven.
Bake 5 minutes, stir, return to oven.
Bake 5 minutes and remove from oven to cool. If you’d like your granola to be darker, increase the bake time by 5 minutes.
Cool completely before storing.
After baking, feel free to add dried fruits, berries, or other desired additions.
